Try this Mouthwatering Recipe!:

Venison Fillets with Bourbon & Green Peppercorn Sauce

Ingredients:

4 six-ounce Venison Fillets
1 tb Green Peppercorns
3 oz. Bourbon Whiskey
1 Chopped Shallot
1/4 c Red Wine
1/4 c Heavy Cream
2 tb Butter
1 tb Chopped Fresh Chives, Thyme and Parsley
Freshly Ground Pepper
Salt

Soak green peppercorns in bourbon for 30 minutes or longer. Heat butter in a sauté pan. Salt and pepper the venison on both sides and sauté in butter, about 2 minutes per side for medium rare (depending on thickness). Remove from pan and keep warm. Add chopped shallots to pan juices; cook 1 minute. Add green peppercorns and bourbon; simmer 1 minute. Add wine, herbs and any meat juices that have drained from the fillets. Simmer until sauce has reduced down to a fine glaze. Add heavy cream and reduce until the sauce reaches a nice consistency. Add salt and pepper to taste. Serve sauce over the fillets. Yield: 4 servings
